Nantes The Old Faithful Red Blend 2019

The grapes, consisting of Cinsaut, Cabernet Sauvignon, and Shiraz, were harvested in early to mid-March at a minimum of 26° balling during cool morning temperatures. After de-stemming, the grapes were given two days of skin contact for flavour and colour extraction. Fermentation took place in open stainless steel tank fermenters with regular pump overs. After fermentation, the wine was racked, and malolactic fermentation was done in tanks. Only the Cabernet Sauvignon was aged in 300-litre barrels. The blending process was meticulously done to ensure that the cultivars complement each other.
